3-Ingredient, Gluten-Free Banana Pancakes

These banana pancakes are incredible- they're delicious, healthy, and only require three ingredients. It's a perfect breakfast (or dessert) recipe to make being while in quarantine because it doesn't even require any flour or baking soda! Hope you enjoy them as much as I do!
Ingredients
Servings: 1
Total time (prep/cook): 10 min
Difficulty Level: Easy
1 medium banana
1 Tbsp of peanut butter (almond butter or your choice of nut butter works too!)
1 egg
1 Tbsp coconut oil or butter
Optional ingredients
Shredded coconut- If I have this, I love adding it for some great texture and flavor
Cinnamon
Chocolate chips
Flax seeds or chia seeds
Directions
Mash the banana in a bowl
Add the egg and peanut butter to the mashed banana and combine
Add coconut oil/butter to a warm pan
Scoop pancake mixture (about 3 Tbsp per pancake) into the pan, cover with lid, and let cook for 2 minutes.
Flip and cook for 1 minute
Ready to serve!

Banana: high in potassium (good for heart health), vitamin B6
Egg: great source of protein and omega-3s
Peanut butter: high in protein, will keep you full longer
Cinnamon: natural anti-inflammatory
