Been on a banana kick for the past few weeks, and not just because I love them so much, but grocery stores have had an excess of bananas. So it's the perfect time to make this super yummy, super moist banana bread! You don't need a mixer for this recipe and can use just one pan so the clean up is simple! I used whatever I had in my fridge/pantry which is the best part of this recipe- it's totally forgiving and gives you a chance to get creative! Hope you enjoy it as much as I do!

Total time (prep/cook): 1 hour (15 min/45min)

2-3 extra ripe bananas (peeled)
1 Tbsp baking soda
1/3 cup of melted butter
1 tsp of maple syrup *^1
2 tsp of cinnamon *^2
1 1/2 cups of organic all-purpose flour
1/4 cup of sugar *^3
Pinch of salt
1 Tbsp of greek yogurt *^4
Walnuts or pecans
Shredded coconut- If I have this, I love adding it for some great texture and flavor
Flax seeds or chia seeds
*^1: Maple syrup is my sub for vanilla extract because I didn't have any on hand and it tastes just as great- if you don't have either leave it out!
*^2: Little more or less of cinnamon won't hurt- I just eyeball it
*^3: Any sugar you have in your pantry works here. You can more sugar if you like it sweeter or less sugar for a more subtle sweetness
*^4: You can use any plain yogurt you have or even vanilla would be great. This addition makes the bread even more moist, but if you don't have it it's still amazing without it!
Pre-heat oven to 350 degrees.
Mash the bananas in a bowl.
Add the egg, salt, baking soda, melted butter, sugar, maple syrup/vanilla, yogurt, and cinnamon and combine.
Add flour and combine.
5. Butter 4x8 loaf pan
6. Pour in banana bread batter and place in oven.
7. Bake for 45-50 minutes or until you can insert a toothpick and it comes out clean.
8. Let cool in loaf pan and once cooled it should pop out nicely if you flip it onto a plate or cutting board.
9. Enjoy warm with coffee, butter or, my fav, on it's own!
Ingredients' Healing Properties
Banana: high in potassium (goof for heart health), vitamin B6
Egg: great source of protein and omega-3s
Peanut butter: high in protein, will keep you full longer
Cinnamon: natural anti-inflammatory
Greek yogurt: great source of healthy fats
