Not only is winter is the perfect season to eat soup nonstop (with the stomach flu going around), summer also offers a great time to have this soup as it will clear your allergies and any summertime colds. This special chicken soup recipe is the best remedy- a play of your childhood chicken soup but with some added elements to help your healing process. Ge ready to be nursed back to health with a nourishing soup that will heal your body and soul.

1-2 lbs of organic chicken breast
1/2 lb or 5-6 stalks* of organic celery
1/2 lb or 5-6 sticks* of organic carrots
1 medium organic sweet white onion
1 Tbsp of turmeric
32 oz of low-sodium chicken bone broth (or regular chicken stock/broth)
20 oz of filtered water
2 Tbsp of thyme
2 whole or 3 Tbsps crushed/dried bay leaves
1 Tbsp of oregano
5 cloves of garlic
1/2 cup of fresh parsley
2 Tbsp olive oil
2 Tbsp of sea salt
1 Tbsp of black pepper
In a large pot, pour in the chicken bone broth (or stock/regular broth), the filtered water, and turmeric; bring to a boil. Add in the chicken, turn down the heat and let simmer so chicken poaches.
Dice onion, mince garlic, chop celery and carrots in small pieces.
In a separate pan, on medium heat: add olive oil, 1/2 of the salt and pepper, diced onion, celery and carrot, let soften for 5 minutes. Add in thyme, bay leaves, oregano, and garlic until fragrant. Remove from heat.
The chicken should be poached so you can remove each piece one at a time, shred with two forks and add it back into the simmering broth.
Once all the chicken has been shredded/added back into the pot, add in the sautéed veggies/garlic/herb mixture, the rest of the salt and pepper, fresh parsley, and let simmer for 20 minutes. Give it a taste here and see if it needs more salt or pepper. The broth is low-sodium and there is a lot of water in this recipe, so there is a chance you will need more salt.

**The longer the soup simmers on the pot, the more flavor that will develop (and it'll be even better the next day!). I like to keep it covered and simmering on low/medium heat for at least 45 minutes, but if you're in a rush, it will still be delicious and ready to eat after 20!
